放三天都不硬❗抹茶奧利奧乳酪冰皮月餅|||💛冰皮食材💛

糯米粉40克

澄粉30克

粘米粉30克

牛奶160克

細砂糖25克

玉米油20克

糯米粉適量(這個需要炒熟)

💛奧利奧奶酪食材💛

奶油奶酪150克

細砂糖30克

奧利奧餅乾碎25克

🌈奧利奧奶酪餡做法

1⃣️奶油奶酪軟化順滑後加入細砂糖拌勻,再加入奧利奧餅乾碎拌勻冷凍20分鐘定型

2⃣️分成每個20克的小球搓圓放入冰箱冷藏備用

🌈冰皮做法

1⃣️所有食材混合攪拌均勻後,用濾網過濾到碗里蓋上保鮮膜上鍋中大火蒸20分鐘,蒸好的麵糰有點硬硬的,用刮刀先刮開,等待麵糰不燙時趁熱揉至光滑

2⃣️麵糰分成2份,一半加入1.5克抹茶粉揉成抹茶味,將揉好的麵糰用保鮮膜包裏好放冰箱冷藏1小時

3⃣️取出2個麵糰,分別搓成長條,交叉在一起,分割成每個25克的擠子搓圓備用

4⃣️用手掌壓圓麵糰,放入奶酪陷,用手捏緊並滾圓,沾少許熟糯米粉,放進月餅模具,壓出花型即可

⚠️小tips

❶冰皮餡一定要蒸熟不然會粘手,我蓋的保鮮膜沒有扎洞避免麵糊進水蒸汽,蒸好的麵糰一定要揉至光滑,表面的油完全吸收進去

❷月餅用保鮮膜包好(完全密封)放冰箱保鮮層冷藏3天都不會硬,做的多的話可以放冷凍,吃的時候提前取出來回溫
